Egg white replacement
Looking for an OGGS aquafaba alternative?
If you are comparing OGGS with VERY AQUAFABA, the main difference is not the ingredient itself but how each product is presented and dosed. OGGS gives its reference in whole eggs: 50 ml per egg, 20 to the litre. VERY AQUAFABA gives a dose per egg white, 30g, with a separate whole-egg conversion when you need it. So before you compare the numbers on the pack, check what your recipe is replacing and which format fits the way you want to work. Updated: .

Both are chickpea aquafaba, but two aquafaba products can give different conversion instructions, so use the dose given for the product and the preparation you are working with and do not transfer one brand's conversion onto the other.
Are you replacing a whole egg or an egg white?
Start with what your recipe is replacing. OGGS gives 50 ml per whole egg, so its litre is expressed as 20 whole eggs and the 10L bag-in-box as 200.
VERY AQUAFABA gives 30g per egg white, so the 1L Tetrapak is expressed as 33 egg whites. For a whole egg the liquid reference is 45g, which makes the litre 22 eggs.
Do not compare 20 whole eggs with 33 egg whites as if they were the same conversion: they refer to different ingredients in the original recipe, and they are two ways of counting the same litre. If your sponge, cake or batter uses whole eggs, use the whole-egg aquafaba conversion and follow the liquid adjustment for that preparation. If your recipe uses egg whites, start from the egg white dose.
Will you use an opened litre within a few days?
With VERY AQUAFABA liquid, keep the opened pack at 2 to 6 °C and use it within 3 to 4 days. If you use aquafaba regularly across several recipes, the liquid can be weighed straight into the bowl. If you use it less often, VERY AQUAFABA also comes as powder, 2g with 30 ml of water per egg white, and the remaining pouch stays dry and closed until its best-before date.
OGGS lists only the liquid, and its page does not state an opened shelf life.
If you work from powder on occasional production days, compare the 200g pouch with your usual batch sizes before you order.
Which formats can you order?
OGGS offers the liquid in 200 ml and 1L cartons, 10L bag-in-box.
