What's in VERY AQUAFABA? Ingredients, labels and dates

Turn the pack around and the ingredient list is two words long: water and chickpeas. VERY AQUAFABA is chickpea aquafaba for whipping, binding and emulsifying. The liquid is ready to use; the powder is the same aquafaba in dried form and is made up with water before use. Here are the ingredients, the allergen information, the storage rules and the quantities you may need when a guest, a buyer or an auditor asks. Updated: .

What is VERY AQUAFABA made from?

VERY AQUAFABA is made from the water in which chickpeas have been cooked. The liquid lists water and chickpeas. The powder is dried aquafaba and has the same ingredient list. There are no additives or preservatives.

What does the label say about allergens?

VERY AQUAFABA itself contains no egg, dairy, gluten or soy. Chickpea is not one of the 14 allergens covered by EU mandatory allergen labelling, but chickpea and other legume allergies can still exist, so anyone with a known chickpea or legume allergy should avoid the product. How the allergen question is answered behind a bar applies to a kitchen too.

"Vegan" and "allergen-free" describe VERY AQUAFABA itself. Check every ingredient before applying either description to a finished dish or drink: vegan and allergen information answer different questions.

What does VERY AQUAFABA taste like?

Straight from the pack, VERY AQUAFABA has a light roasted note from the cooking of the chickpeas. When it is shaken into a cocktail, that note disappears and the flavour stays with the spirit, the citrus and the syrup. For desserts and other preparations, taste the first finished batch before you scale production.

How long does VERY AQUAFABA keep?

Unopened liquid and powder keep for at least 12 months at room temperature. Work from the best-before date printed on the pack you have in front of you. Once opened, keep liquid VERY AQUAFABA at 2 to 6 °C and use it within 3 to 4 days. Keep an opened pouch of powder dry and closed and use it by the best-before date printed on the pouch.

Opened liquid can also be frozen at -18 °C for up to 3 months in portions of 30 to 50g. Thaw it in the fridge, stir until even and never refreeze it. Check how to store and freeze aquafaba when you need to keep opened liquid beyond 3 to 4 days.

What does each pack replace?

Use 30g of liquid VERY AQUAFABA for one egg white. For powder, 2g of powder with 30 ml of water makes 32g of aquafaba and replaces one egg white. Where you replace a whole egg, use 45g of aquafaba.
