How to make a gin fizz with aquafaba
A gin fizz has a bit of theatre to it. It starts life like a sour in the shaker, then stretches upward in the glass, finished with tonic and a white head riding on top. That only works when the order is right. Use 20 ml of VERY AQUAFABA in place of the egg white, build the foam first, then let the highball become a highball after the strain. This guide shows the full spec, the shake, the top, and the small details that keep the drink lively instead of flat. Updated: .
What goes in the shaker, and what goes in the glass
- 40 ml gin
- 20 ml lemon juice
- 20 ml cane sugar syrup
- 20 ml VERY AQUAFABA, chilled
- Tonic water to top, in a highball glass
- A slice of dried lemon for the garnish
Keep the tonic beside the glass, not beside the shaker. Everything else is shaken first.
How to build it
- Pour the gin, the lemon, the cane sugar syrup and the aquafaba into the shaker.
- Shake hard without ice to build the foam.
- Add 8 to 10 ice cubes and shake again to chill the drink.
- Strain into the highball glass.
- Top with tonic water.
- Lay the dried lemon slice on the head.
Tips for a gin fizz with aquafaba
The head is made before the tonic enters the drink. Dry shake the gin, lemon, syrup and aquafaba, shake again with ice, then strain. The tonic goes into the highball afterwards so the long part of the drink is built in the glass, not in the shaker.
Batch the gin, lemon and syrup, and you reduce each order to a few clear moves. Pour the base, add 20 ml of chilled aquafaba, shake twice, strain, then top with tonic. Keeping both the aquafaba and tonic out of the batch protects the two things this drink needs at the end: its head and its fizz. The gin fizz process sheet keeps that order on one page.
Fixing a thin head on a gin fizz
| What you see | Why | Fix |
|---|---|---|
| Thin head before the tonic goes in | Ice went in before the dry shake | Dry shake first, ice second |
| A slack foam that rises slowly | The aquafaba was at room temperature | Keep it in the fridge until the shake |
| The head has gone by the time the drink reaches the table | The drink waited on the pass | Shake, top and serve at once |
How fast do gin fizzes move?
A 1L Tetrapak makes 50 gin fizzes and a 10L bag-in-box makes 500. Once opened, liquid stays at 2 to 6 °C and is used within 3 to 4 days, so the right pack is the one your service can actually move through.
If gin fizz orders are less predictable, use 1.3g of powder with 20 ml of water per drink. Make up what you need before service, chill it, and keep the rest of the pouch dry and closed. The gin fizz quantity calculator works out the night.
