How much aquafaba per gin fizz? Quantity calculator

Type in the number of gin fizzes and the calculator works out everything that goes into the shaker: gin, lemon juice, cane sugar syrup and VERY AQUAFABA, in liquid or powder. The tonic isn't included, because the amount depends on your glass. Updated: .

What the calculator leaves out

The table stops before the final top. Tonic is added in the highball after the strain, so the amount follows your glass rather than a fixed recipe measure. Ice is also outside the calculator: allow 8 to 10 cubes per drink for the second shake.

How many gin fizzes from a pack

  • 1L Tetrapak: 50 gin fizzes.
  • 10L bag-in-box: 500 gin fizzes, for high-volume venues or several bars sharing a pack.
  • 200g pouch: 150 gin fizzes.
  • 3kg pouch: 2,250 gin fizzes.

Once open, a liquid pack is kept at 2 to 6 °C and used within 3 to 4 days; a pouch, kept dry and closed, keeps until its best-before date.

40 gin fizzes: what goes behind the bar

For 40 gin fizzes, prepare 1,600 ml of gin, 800 ml of lemon juice, 800 ml of cane sugar syrup and 800 ml of VERY AQUAFABA. If you use powder, make up 53g with 800 ml of water before service.

Tonic stays outside the batch and outside the calculator, because the gin fizz is topped in the glass. Shake each drink, strain it into the highball, then top it to your house serve, in the order the gin fizz process sheet sets out.
