Cocktail foamer
Bulk cocktail foamer: 10L liquid or 3kg powder?
Pouring sours all night from 1L cartons means opening a lot of cartons. At higher volumes, VERY AQUAFABA comes in two larger formats: the 10L bag-in-box makes 500 drinks at 20 ml each, while the 3kg powder pouch makes 2,250. The right choice depends less on the total size of the pack than on how quickly your bar will use it. Updated: .
Can you finish 10L in time?
Once opened, a 10L bag-in-box is kept at 2 to 6 °C and used within 3 to 4 days.
500 drinks across that period works out at roughly:
- 167 sours a day over 3 days
- 125 sours a day over 4 days
If your service is regularly around that level, the 10L format gives you liquid aquafaba ready to pour without moving through multiple 1L cartons.
If your daily volume is well below that, the opened-pack clock starts to matter more than the size of the pack.
What if you are between 1L and 10L volumes?
Not every bar fits neatly into a pack threshold.
A 1L Tetrapak makes 50 drinks, which means around 13 to 17 drinks a day if you want to finish it within 3 to 4 days.
A 10L bag-in-box moves that threshold up to around 125 to 167 drinks a day.
If you sit somewhere between the two, the decision depends on how steady your service is. Several 1L packs may make sense when volumes are predictable. Powder can make more sense when the number of sours changes sharply from one day to the next.
When powder makes more sense
The 3kg pouch makes 2,250 drinks at 1.3g of powder with 20 ml of water per drink.
Unlike opened liquid, the opened pouch does not have to be used within 3 to 4 days. Keep it dry and closed, and it keeps until the best-before date on the pouch, so you can make up what a service needs rather than committing to an opened 10L pack.
Prepare the quantity you need before service and keep the made-up aquafaba chilled.
Pack by service pattern
| Your service | Pack to consider | Why |
|---|---|---|
| Around 13 to 17 sours a day | 1L Tetrapak | 50 drinks, enough to finish the pack within 3 to 4 days |
| Between the liquid pack thresholds | Several 1L packs or powder | Depends on how steady your volume is |
| Around 125 to 167 sours a day | 10L bag-in-box | 500 drinks, enough to finish the pack within 3 to 4 days |
| Volume changes significantly from day to day | Powder | Make up what you need; the opened pouch keeps dry and closed until its best-before date |
The table is a starting point, not a rule. A venue with very uneven volumes may prefer powder at a higher average, while a bar with extremely predictable service may find liquid easier to run.
