Cocktail foamer
Is aquafaba just chickpea water?
Yes. Aquafaba is the cooking liquid of chickpeas, so the liquid in a can and VERY AQUAFABA start from the same idea. The difference behind the bar is how you work with them. A can has to be opened and drained, and the liquid can vary with the product you buy. VERY AQUAFABA comes as a defined product with a working dose of 20 ml per drink, ready to pour from the fridge. Why that matters during service
One sour is easy to adjust. Forty in the middle of a busy service are less forgiving.
With canned chickpea liquid, you may need to adapt to the liquid you have opened. With VERY AQUAFABA, everyone can work from the same 20 ml dose per drink. That makes it easier to write one spec, train the station around it and pre-batch the rest of the sour while keeping the aquafaba separate for the shake.
You still make the foam one drink at a time. The advantage is that the dose does not have to be reinvented with every new can.
