For kitchens and bakeries
A reliable egg white replacement for kitchens and bakeries
You have meringues, macarons and mousse on the prep list, but the quantities change from one production day to the next. Plan the aquafaba from those recipes rather than from a theoretical weekly total. Use 30g of liquid VERY AQUAFABA per egg white, then check how much you will actually use within the 3 to 4 days after opening a liquid pack. Updated: .
How many egg whites are on your prep list?
Start with the recipes you already make. A batch of the meringue uses 150g of aquafaba for 5 egg whites. The macaron and mousse recipes each use 120g for 4 egg whites. Record the number of batches first, then convert those recipes into the aquafaba quantity you need.
Whole eggs use a different rule: 45g of aquafaba per whole egg.
Will you use the liquid within 3 to 4 days?
A 1L Tetrapak replaces 33 egg whites. Once opened, keep it at 2 to 6 °C and use it within 3 to 4 days. That means a weekly total alone is not enough. Put the recipes on the days when you make them and see how much aquafaba you use inside one opened-pack window.
If the production is more spread out, powder lets you prepare each batch separately. Use 2g with 30 ml of water per egg white and keep the remaining powder dry and closed. Check how to store opened aquafaba when the two formats share a week.
Which pack covers the volume you already use?
| Format | Pack | Egg-white equivalents |
|---|---|---|
| Liquid | 1L Tetrapak | 33 |
| Liquid | 10L bag-in-box | 330 |
| Liquid | 1T IBC | 33,000 |
| Powder | 30g pouch | 15 |
| Powder | 200g pouch | 100 |
| Powder | 3kg pouch | 1,500 |
Do not choose from the biggest number you can use eventually. Choose from the quantity you can rotate in the way that format needs to be stored.
Put the quantity beside the recipe
A useful production sheet has four pieces of information:
| Day | Preparation | Batches | Aquafaba needed |
|---|---|---|---|
| Monday | Meringue | Your count | Recipe dose × batches |
| Tuesday | Mousse | Your count | Recipe dose × batches |
| Wednesday | Macarons | Your count | Recipe dose × batches |
That shows whether several preparations can use the same open liquid pack or whether powder makes more sense for separated oven days. Use the pack finder once those numbers are on the sheet.
