How much can you make with 1L of aquafaba?
You open a 1L Tetrapak for a tray of meringues, then reach for the same pack again for mousse, mayonnaise or a run of sours before the week is out. That is where the 1L format works well: several different preparations can share the same open pack over a few production days. One Tetrapak gives you 6 meringue batches, 16 mayonnaise batches, 8 full chocolate mousse batches or 50 cocktails. A pastry section may split the pack between mousse and meringue, while a bar may use it entirely for sours. Whether you whip a meringue, make mayonnaise or make chocolate mousse, keep the method for that recipe rather than changing it for the pack size.
Why choose liquid for regular use?
Liquid aquafaba is already prepared, so there is no reconstitution step before you weigh it into a recipe. For egg-white replacement, use 30g of liquid VERY AQUAFABA per egg white. Where aquafaba replaces a whole egg for binding or moisture, use 45g.
Behind the bar, the cocktail recipes use 20 ml per drink. At that dose, one Tetrapak makes 50 cocktails. If that matches your service, you can shake cocktails with aquafaba straight from the chilled pack.
Will you finish an opened 1L pack in time?
Once opened, keep the liquid at 2 to 6 °C and use it within 3 to 4 days. Put that storage window next to the yield table: 6 meringue batches or 50 cocktails may be easy to use in that time for one kitchen or bar and far too much for another.

Are you using more than one Tetrapak over the same few days?
Consider a larger format when you are regularly using more than one 1L Tetrapak over the same production window. The 10L bag-in-box is for continuous liquid use rather than occasional batches. If one Tetrapak still covers several production days comfortably, stay with 1L.
