Liquid and formats
Is a 10L bag-in-box of aquafaba right for your kitchen?
If you are opening one 1L Tetrapak after another through service or production, the smaller format may have stopped matching the way you work. The 10L bag-in-box is for continuous use: hotel kitchens, bars with a steady run of sours, beverage production or foodservice operations using liquid aquafaba every day. It replaces 10 Tetrapaks and represents 330 egg whites. The question is whether you can use that amount within the same 3 to 4 day opened-pack window. Updated: .
Are you already using liquid aquafaba every day?
Choose 10L when you already use liquid aquafaba continuously through service or production. A hotel group may use it across several kitchens. A bar may pour sours throughout service. A beverage line or foodservice kitchen may use the same liquid across repeated production runs.
In each case, you are using the opened liquid regularly rather than storing it between occasional batches.
What does 10L cover in production?
| Production use | From one 10L bag-in-box |
|---|---|
| Meringue | 66 batches |
| Mayonnaise | 166 batches |
| Cocktails | 500 sours |
| 1L Tetrapaks | 10 packs |
Compare those numbers with a normal few days of production. A pastry operation can run meringue batches from the same supply, while a bar can pour sours through service without opening another Tetrapak.
Does anything change in the recipe?
No. Use 30g of liquid VERY AQUAFABA for each egg white you want to replace. The larger format changes the amount you have on hand, not the recipe ratio or method. If you make mayonnaise, whip meringue or use aquafaba in another established preparation, keep the method for that application.
Can you use 10L within 3 to 4 days?
Opened liquid VERY AQUAFABA is kept at 2 to 6 °C and used within 3 to 4 days. Only choose 10L if you can use the opened liquid within that window. That usually means using it throughout service or across repeated production runs rather than waiting for the next occasional batch.
If you would be pushing to finish it, the 1L Tetrapak is the better quantity to keep open. Check how to store opened aquafaba before deciding which pack size fits your production rhythm.
How do you get a quote for 10L?
