Powder and formats
Who needs a 3kg pouch of aquafaba powder?
A 3kg pouch of VERY AQUAFABA powder replaces 1,500 egg whites. That number starts to matter once aquafaba is already part of regular production and the smaller pouches are being used up one after another. For a pastry lab, a central kitchen or a food producer, the question is not whether the whole pouch will be made up at once. It is whether the scale of the work has outgrown the 200g pouch. When 1,500 egg whites becomes a useful number
The 3kg pouch is the format to compare once your use has moved past recipe tests and into repeated production. A 200g pouch replaces 100 egg whites; the 3kg pouch replaces 1,500, which is 15 of the smaller pouches in one pack.
Those two figures give you the comparison: look at how often you replace the 200g pouch and whether that format still fits the scale of the work. Nobody makes up 1,500 egg whites at once; the pouch is there so repeated runs keep the same dosing per recipe without reopening a small pack.
What higher-volume use looks like
Higher-volume use is still spread across preparations. A pastry lab draws from the same pouch for macarons, meringues and mousses. A central kitchen uses it in several parts of production. A food producer runs it through repeated egg-free batches, and plans the stock from the egg-white count rather than from the pack.
The 3kg format is for that stage: aquafaba is established in the work, and opening a 200g pouch every few days is no longer practical.
Make up only what the run needs
The ratio does not change with the volume: 2g of powder with 30 ml of water for each egg white in the recipe. A run calling for 50 egg whites uses 100g of powder with 1.5L of water.
For whipped preparations, chill the made-up aquafaba to the whipping temperature the recipe asks for before use. The reconstitution table gives the quantities and the temperatures from one egg white upward, and larger runs scale from the same ratio.
How to store the pouch between runs
After opening, keep the powder dry and closed and use it by the best-before date printed on the pouch. Before opening, it keeps at least 12 months at room temperature.
So the pouch stays dry between production runs, and no run has to make up more aquafaba than its recipe needs.
How do you order the 3kg pouch?
The 3kg pouch is a professional format, quoted for your project in every country rather than sold as a standard online pack. Send an enquiry with your country, what you are making and roughly how much aquafaba you expect to use, and we confirm the ordering details and the technical sheet for your market.
Watch how quickly the 200g pouch is replaced in your normal production. If you open them one after another, compare the formats and use the business option in the purchase window below before the next order.
