What scales, and what stays one drink at a time

Double the drinks and you double the pisco, lime, syrup and aquafaba. What you cannot batch away is the foam: each drink still needs its own dry shake, followed by 8 to 10 ice cubes for the second shake. Plan the ingredients in bulk, but keep the final build per drink.

How many pisco sours from a pack

1L Tetrapak: 50 pisco sours.
10L bag-in-box: 500 pisco sours.
200g pouch: 150 pisco sours.
3kg pouch: 2,250 pisco sours.

An opened liquid pack is kept at 2 to 6 °C and used within 3 to 4 days, so size the pack to what you pour in that time. An opened pouch, kept dry and closed, keeps until its best-before date.

40 pisco sours: what needs to be ready

For 40 pisco sours, prepare 1,600 ml of pisco, 800 ml of lime juice, 800 ml of cane sugar syrup and 800 ml of VERY AQUAFABA. You will also need 320 to 400 ice cubes for the second shakes. A 1L Tetrapak covers the aquafaba and leaves 200 ml to use within the remaining 3 to 4 days of the opened pack.

Using powder instead? Make up 53g with 800 ml of water before service and keep it chilled. The quantities can be prepared in advance, but every drink still gets the same two-shake service, and the pisco sour process sheet gives the station the checks.
