What makes the foam
In Fee Foam, the label lists polysorbate 80 (E433), an emulsifier, alongside propylene glycol (E1520), with potassium sorbate (E202) and sodium benzoate (E211) as preservatives. In VERY AQUAFABA the foam comes from the chickpea itself, and the label stops at water and chickpeas.
If ingredients matter to your menu, compare every foamer label in one table.
Dashes or a measured pour
The maker suggests 4 to 6 dashes per drink of Fee Foam. VERY AQUAFABA is measured with a jigger at 20 ml, the same pour every time, and once opened the 1L Tetrapak is kept at 2 to 6 °C and used within 3 to 4 days. It makes 50 drinks.
Try it in a sour you already make
Take one sour off your list, swap the dashes for 20 ml of VERY AQUAFABA, shake dry, then with ice, and compare the head. A pisco sour is an easy first test.
