Aquafaba for catering and events
You know how many guests are coming. Now decide which aquafaba needs refrigeration during transport, what you can prepare before leaving and what should wait until service. Powder travels dry. Unopened liquid can travel at room temperature. Once liquid is open, keep it at 2 to 6 °C and use it within 3 to 4 days. Updated: .
What needs a cold chain?
| What you carry | During transport | After opening or making up |
|---|---|---|
| Powder pouch | Dry storage | Keep the unused powder dry and closed |
| Unopened liquid | Room temperature | Refrigerate after opening |
| Opened liquid | 2 to 6 °C | Use within 3 to 4 days |
| Made-up powder | Treat as prepared aquafaba | Chill according to the recipe |
Do not prepare the entire pouch before the event if you only need part of it. Make up the quantity the service needs: 2g of powder with 30 ml of water per egg white, and the reconstitution table for any count. Check how to store opened aquafaba for the cool box.
What should you prepare before leaving?
For cocktails, pre-batch the spirit, citrus and syrup when the recipe allows it. Add the aquafaba when you shake the drink, not to the pre-batched base. The cocktail dose is 20 ml per drink, measured with a jigger; one 1L Tetrapak covers 50 drinks. Use the cocktail guide when you need quantities for a specific service.
For meringue-based desserts, the oven work can happen before the event. Dried meringues store airtight in a dry place, and pavlova bases can be baked 1 day ahead and assembled with cream and fruit at service.
How do you size powder for an event?
Start from the recipe or drink dose rather than converting every serve into an egg white. For meringue, one batch uses 10g of powder with 150 ml of water and makes about 30 small meringues. For pavlova, one 20 cm base uses the same 10g of powder with 150 ml of water. For cocktails, use the 20 ml drink dose and the cocktail quantity tools rather than the egg-white conversion.
That keeps the event order aligned with the recipe you are serving.
What should you tell guests about allergens?
VERY AQUAFABA itself contains no egg, dairy, gluten or soy. Chickpea is not one of the 14 allergens covered by EU mandatory allergen labelling, but chickpea and other legume allergies can still exist. Check every other ingredient before describing the finished dish or drink as vegan or allergen-free, and answer the allergen question before a guest asks.
