What changes when you make several frames?
Multiply every ingredient weight by the number of frames you are making: the two waters, the two sugars, the invert sugar, the carrageenan, the coconut and the aquafaba. Keep the recipe settings unchanged: cook the syrup to 121 °C, let it cool to 95 °C, heat the carrageenan mixture to 80 °C, and toast the coconut for 8 minutes at 150 °C with the fan on. A larger quantity can take longer to reach the target temperature, so use the thermometer reading rather than increasing the temperature.
If you use powder, make it up and chill it first: 8g with 120 ml of water gives 128g of aquafaba, from which you weigh the 100g for one frame.
How much do you need for two frames?
For two frames, prepare:
- 200g VERY AQUAFABA
- 170g water for the syrup
- 570g sugar
- 280g invert sugar
- 230g water for the carrageenan
- 10g sugar for the carrageenan
- 15g iota carrageenan
- 500g dried grated coconut
If you use powder, make up 16g with 240 ml of water, then weigh the 200g the two frames need.
How many frames can you pour from each pack?
| Pack | Marshmallow frames |
|---|---|
| 1L Tetrapak | 10 |
| 30g pouch | 3 |
| 200g pouch | 25 |
| 3kg pouch | 375 |
At 100g a frame, an opened litre covers 10 frames inside its 3 to 4 days. If marshmallows are an occasional line, the pouch keeps dry and closed between batches.
How do you use the scaled quantities?
Weigh everything before you put the syrup on, toast the coconut first and prepare the frame or frames on silicone mats or guitar sheets. Then follow the coconut marshmallow method using the same sequence for each batch. If you are working with several frames, the process sheet keeps the temperatures and steps together.
